2 lbs ground beef
1 Vidalia onion
½ green pepper
2 small poblano peppers
2 Tablespoons of minced garlic
1 can diced tomatoes
1 small can tomato paste
2 cups beef broth
3 Tablespoons Chili powder
2 teaspoons cumin
Salt and pepper
Brown the ground beef in a large pot with the diced onion,
green pepper and poblano peppers. Drain
off the fat once its cooked. Then add
the garlic and diced jalapeno. Stir
those in. Add the canned diced tomatoes,
the tomato paste, the beef broth, the chili powder and the cumin and stir
together. Bring this to a simmer stirring
occasionally and let sit for 30 minutes.
Mine simmered for about 2 hours and was delightful!
